Bistec a la Mexicana is a vibrant Mexican beef stew that pairs tender beef with a rich salsa made from fresh tomatoes, chillies, onions & garlic. COOKING TIME

35min & 20min Marinating the Meat

Ingredients

  • 500g beef rump
  • 2 garlic cloves
  • 1/2 onion, sliced
  • 2 long green chillies julienned
  • 2 tomatoes, sliced
  • Oil
  • Salt & pepper to taste

Salsa Ingredients

  • 2 tomatoes
  • 1 long green chilli
  • 1/4 onion
  • 1 garlic clove
  • Salt to taste

Cooking Instructions

1. Cut the beef into strips & marinate with salt & pepper for 20 minutes.

2. Finely chop the garlic & slice the onion, tomato & chilli.

3. In a hot pan with oil, pan-fry the meat & garlic until well-seared.

4. Cover with a lid & reduce heat to medium-low.

5. After 15 minutes, add the onion & chilli, increasing heat to medium-high.

6. Boil all the salsa ingredients until well-cooked & blend everything together with salt to taste.

7. Once the onion & chilli are cooked, add the tomato, followed by the salsa after 5 minutes.

8. Taste & adjust salt if necessary, then cook for another 15 minutes.
